Protein Pancakes—with Cottage Cheese

This high protein breakfast is a favorite at our house to get the day started strong! Even with cottage cheese included, we think they taste just as good as regular pancakes and more satisfying. My two-year-old will order these pancakes every single morning and I don't feel guilty about serving them frequently because he is getting cottage cheese, eggs, and rolled oats in the form of his beloved pancakes. :)

Directions
Ingredients:
- 1 cup rolled oats
- 1 cup Raw Cottage Cheese
- 1 cup Pastured Eggs (usually about 4)
- 1/8 tsp. Salt
- 1/2 tsp. cinnamon (optional)
- pinch of baking soda for fluffier pancakes (I usually skip it)
Step-by-step Instructions:
- Blend oats in a high-speed blender until it becomes a coarse flour.
- Add the rest of ingredients and blend again. It also works to put all ingredients in a small bowl and blend with an immersion blender.
- Heat a skillet on medium heat and add a bit of butter.
- Pour desired size of pancake and cook until bubbles begin to form.
- Flip and cook another 2-3 minutes until done to your preference.
- Serve with butter and maple syrup or other favorite toppings. (my toddlers like a smear of peanut butter on theirs—more protein!)
